Here, we’ll make a super fast cucumber salad with apple cider vinegar and dill. The crunch that you get with the chunky cucumbers and the roasted sunflower seeds is amazing! Hulled hemp seeds create an interesting contrast to the crunch because they are so tender. I also add some greens because greens are always welcome, especially if we want an energy-boosting snack.
You can also use other vinegars than apple cider vinegar. I recommend light vinegars like white grape or rice vinegar. Of course, it’s best if you can make them yourself. Avocado would be a nice addition, too, and a beautiful contrast to the rather rough texture of cucumbers.

Cucumber Salad with Apple Cider Vinegar and Dill (Vegan)
Ingredients
- 3 cups cucumber
- 2 tbsp dill
- 2 handsful greens
- 4 tbsp sunflower seeds
- 1 tbsp hulled hemp seeds
- 6 tbsp apple cider vinegar
Instructions
- Put the sunflower seeds into a pan and let them roast at a high temperature while swirling occasionally.
- While keeping an eye on the sunflower seeds cut the cucumber into cubes.
- Toss all ingredients into a bowl.
