Gaszpacho with Strawberries

A gazpacho (Spanish raw tomato soup) is one of my favourite raw soups – especially in summer. Traditional gazpacho is already very refreshing, but it’ll give you a real summer kick when strawberries are added! This is what I prepared for my parents the other day.

For my parents, I added some special sour cheese called Çökelek from Turkey on top.

INGREDIENTS (3 servings)

  • 1 kg tomatoes
  • 1/2 a red paprika
  • 1/3 a cucumber
  • 6 strawberries
  • 2 cloves of garlic
  • 1/2 an onion
  • 6 tbsp olive oil
  • 2 handsful of basil
  • salt, pepper

METHOD

Put a few basil leaves aside for garnishing. Dice the cucumber and 4 of the strawberries. Blend the rest of the ingredients, add the strawberry dices. Place the cucumber dices in a bowl and add the soup on top. Garnish with the strawberries and basil.

So easy and so good : )
